History of Enriched Flour

We’ve been taught that bread is all carbs and that it’s not nutritious for our bodies. That’s only part of the truth though. It’s only been since the rolling mills were invented and the nutrients were stripped out of flour with a few synthetic nutrients added back in. When you mill the wheat fresh, it retains all of the nutrients. We don’t sift any of our flour so everything that is in the wheat berry is in the flour we use.

Did you know wheat actually contains 40 out of the 44 essential nutrients our bodies need? It’s a superfood that we never seem to hear about!

Fiber: It’s high in both soluble and insoluble fiber which slows down glucose absorption and prevents blood sugar spikes, helps you feel full, acts as prebiotics, and keeps you regular (helps with constipation).

V Vitamins: It contains the entire B complex of vitamins except for B12. B vitamins are essential for producing energy, producing neurotransmitters and red blood cells, nerve function, synthesis of DNA and RNA, immune health, and mental health (they support your mood).

  • Vitamin B2 (Riboflavin)
  • Vitamin B3
  • Vitamin B5
  • Vitamin B6
  • Vitamin B7 (Biotin)
  • Vitamin B9 (Folate)

Vitamin E: It contains antioxidant properties that support your immune system and protect your body from oxidative stress.

A Whole Food

When wheat is milled fresh and used without sifting anything out, it’s a whole food and contains everything it started with. It seems no matter how long people study food and vitamins, new information is always coming out showing how little we really understand.

Do we really know about every component in foods and how they work together? It makes sense to me that food was created in a way that’s nourishing to our bodies and when it’s in it’s whole food form, it has everything it was made with designed to work together. When we start taking it all apart and adding synthtic vitamins baack in we are assuming we have a full understanding of how it all works and what the body needs, then years later, we find out we had it all wrong and that we’ve created a much bigger problem.
